Kendrick Recruitment is now seeking a creative, outgoing Pastry Chef De Partie for a new lodge opening early 2021and is located in Northern KZN. The position requires a passionate and committed Pastry Chef who understands the demands of Safari lodges and is committed to working with community cooks and developing an excellent standard of pastry at the lodges.

Requirements:

Must have at least 2 years in the industry at the required level of skill/ expertiseMust be able to perform in a ‘Safari Pastry Kitchen’ that is typically more limited than hotel pastry kitchens – and with a remote location supply chain that encourages more creativity and an ability to adapt.

Knowledge of current leading pastry trends and plating styles

Experience of training cooks and imparting solid industry skills and standards

Fluent in English with an ability to converse in Zulu desirable

Excellent knowledge of food safety, storage, health standards and nutrition

Responsibilities:

Managing all aspects of the pastry kitchen from recipe development to preparation and cost management Training & upskilling community members through an in-house development program

Committing to sustainable environmental practices like lowering plastic, food miles and sourcing local and sustainable produce.

Ability to manage the various pastry needs of larger events/weddings/conferences at the lodge.
